The wagashi has been nurtured long time in Japan and now attracting many artistic fans from all over the world for its beauty and philosophy. Junichi Mitsubori, grand master of the "Ichika" style that he has founded traditional sweets into a refined work of art with elegant performance of creation. His work has been attracting attention in many Asian countries and for the first time as a wagashi artisan at the Salon du Chocolat 2017 in France. 
Mitsubori's first book, abound with brilliant photography of his work, is written in Japanese/French bilingual style.
